This audit looks at how the employees, visitors, inspectors, contractors, etc. conduct themselves in the plant, with specific focus given to food handlers or those working while product is in the area.
This audit can be conducted during several processing shifts and even on a weekend.
This audit will encompass many departments, including maintenance.
Properly implemented GMPs are critical to producing a safe high quality food product.
When it works, it works well - but if there are even small GMP violations they can bypass all other Food Safety and Quality programs you may have. (The weak link!)
Proper GMPs need to be done as a reflex, with no thought required. The good news is that the reasons for doing proper GMPs are easy to understand and also easy to apply even when you get home, preparing your own meals and food related activities with family.
