This audit looks for bacterial harbourage areas in food processing equipment – direct contact, and non-direct food contact equipment.
We also look for harbourage in areas and equipment that share the same spaces and areas where Food Contact-Equipment is located, and where products are processed, stored-in, or pass through.
Looking for populations of bacteria that are already resident in the plant; not removed during daily sanitation practices.
Optional: swabs can also be included in the survey, with the results going to the plant and not the auditor.
